I Smell Fishy Today :)

Today is weekly pasar malam.I bought fish as it has been days i didn't eat this protein sources.I bought 'ikan aye' or known as 'ikan tongkol' by kl people or we can say it tuna fish.It was very different from my mom's asam pedas or my home town people's.Our asam pedas was simple & the 'kuah' is not as thick as these recipes.Kl people called my home town asam pedas as asam rebus.Weird hah!
But i don't care as i want to sample something different today.Wish me luck....

ASAM PEDAS IKAN AYE

bahan
500 gm ikan aye [potong kecil dan bersihkan]
10 biji bendir
1 biji buah tomato [belah 4]
1/2 cawan jus asam jawa
1 tangkai bunga kantan [belah 2]
4 s/b minyak masak
garam

bahan mesin
10 tangkai cili kering
1 labu bawang besar
3 ulas bawang merah
3 ulas bawang putih
1 s/k kunyit serbuk
3 cawan air

Cara
1. Panaskan minyak dan tumiskan bahan mesin sehingga naik minyak dan wangi.
2. Masukkan air asam jawa dan air. Renehkan sehingga mendideh.
3. Masukkan ikan & garam dan biarkan sehingga mendideh lagi.
4. Masukkan buah tomato, bunga kantan dan bendir.
5. Perlahankan api dan biarkan sehingga naik minyak dan sayur lembut.
6. Angkat dan hidangkan bersama nasi putih.



ASAM PEDAS IKAN TENGGIRI

Bahan
500 gm ikan tenggiri [potong 3 keping dan bersihkan]
5 niji terung panjang [potong kecil]
1 biji buah tomato [belah 4]
1/2 cawan jus asam jawa
5 tangkai daun kesum
4 s/b minyak masak
3 cawan air
secubit gula
garam

bahan mesin
15 tangkai cili kering [kalau nak pedas boleh tambah]
1 labu bawang besar
3 ulas bawang merah
3 ulas bawang putih
1 s/k kunyit serbuk

Cara
1. Panaskan minyak dan tumiskan bahan mesin sehingga naik minyak dan wangi.
2. Masukkan air asam jawa dan air. Renehkan sehingga mendideh.
3. Masukkan ikan, terung & garam dan biarkan sehingga mendideh lagi.
4. Masukkan dan daun kesum.
5. Perlahankan api dan biarkan sehingga naik minyak dan terung lembut.
6. Angkat dan hidangkan bersama nasi putih.
I can only this recipe using 'ikan pari' when my fiance is not around.If i cook it anyway,he wouldn't eat it.Why?Bcoz' he didn't eat 'ikan pari'.Too fussy hah!


ASAM PEDAS IKAN PARI [versi cilipadi & lada hitam]

Bahan
500 gm ikan pari [potong kecil]
2 biji tomato [potong 4]
1/2 cawan air asam jawa
air secukupnya [untuk kuah
]garam
minyak untuk menumis
daun sup [potong pendek]

Bahan tumbuk/mesin halus
20 biji cili api
2 s/b lada hitam
2 cm halia
2 cm kunyit hidup
2 cm belacan
2 ulas bawang putih
6 ulas bawang merah
1 tangkai serai

Cara
1. Basuhkan ikan pari..rendamkan sebentar dengan asam limau + asam jawa + garam. Bilas dan toskan sehingga kering.
2. Panaskan minyak dan tumiskan bahan mesin sehingga wangi dan masak/garing.
3. Masukkan air asam jawa dan air. Biarkan sehingga mendideh.
4. Masukkan ikan, garam dan buah tomato.
5. Biarkan kuah reneh sehingga agak pekat.
6. Masukkan potongan daun sup dan hidangkan bersama nasi putih.
