Homemade Dorayaki

Ingredients:

Azuki Filling:
100 g red beans/azuki
400 ml water
80 g sugar
1 tsp salt

Pancake:
100 g flour
1 tsp baking powder
1/2 tsp salt
50 g sugar
1 tbsp honey
2 eggs
80 ml water

How to make:
PREP -: Soak red beans in 400ml water overnight.
1. In a deep pot, boil soaked red beans. Scoop out the bubbles that will start to form on the surface of the water. This is to avoid the red beans from going bad fast.
2. When the water has reduced to almost the same height as the beans, reduce the heat and add in sugar and salt, gradually.
3. Using small heat, cook red beans until they're soft and mash them a little bit to make it easier to spread on top of the pancake later on. Leave to cool.
4. In a bowl, whisk 2 eggs & sugar until they start to fluff a little bit. Then add in the honey. Stir well.
5. Sift in flour & baking powder into the bowl and carefully mix and avoid any lumps from forming. Add in water. ( using a whisk helps a lot! ) On a slightly heated non-stick pan, pour in 1 1/2 tbsp of the pancake mix. You can use as much as u want. Bigger dorayaki will need more than 1 tbsp of mixture. Remember that the skin of these pancake browns easily so no need to use too much heat. Turn over the dorayaki once it is brown and give the other side of the dorayaki to brown just a little.
6. Spread the azuki filling and sandwich them together to form a Dorayaki. Voila!
