Sayur Air Pucuk Midin

Have u ever heard about pucuk midin? Some called it pucuk paku midin, pucuk niding & pucuk paku merah. It is different from pucuk midin found in sarawak. We in trganu called it pucuk midin. My mom always cooked pucuk midin bcoz' it was ez to find in my village.
My mom used it to make bubur lambuk. The more we put it the better the taste. Sometimes my mom make sayur air pucuk midin. She mixed the sayur with pucuk kapal terbang, daun kesum, daun lampin budak, daun beras putih, etc. Sorry to say, of all the leaves she put into, i only managed to recognized pucuk kapal terbang & daun kesum.

Sayur Air Pucuk Midin

Bahan-bahan
1 ikat pucuk midin
Sedikit daun kesum
Sedikit daun cekur manis
Sedikit daun kemangin
Sedikit daun kadok
3 ketul ubi keledek (dikupas kulit & dibelah 4) - org trganu panggil ubi stele
4 ulas bawang merah
1 ulas bawang putih
secubit lada hitam - jika suka pedas, boleh letak lebih
2 ekor ikan selayang/sardin - dikukus & diambil isinya
Garam & serbuk perasa
Sedikit budu - jika suka
Air

Cara-cara
1. Tumbuk bawang merah, bawang putih & lada hitam hingga lumat. Masukkan ke dalam periuk yang berisi air.
2. Masukkan isi ikan.
3. Masukkan ubi keledek. Biarkan kuah menggelegak & ubi empuk.
4. Apabila ubi telah empuk, masukkan pucuk paku, daun kesum, daun cekur manis, daun kemangin & daun kadok.
5. Masukkan garam & serbuk perasa. Kacau seketika. Bolehlah dihidangkan.
6. Budu boleh dimasukkan akhir sekali. Jika dimasukkan budu, kurangkan garam kerana budu sudah masin.
