Pineapple + Rice

Recipe for today...i'm going to try it bcoz' yesterday i bought a pineapple.I can't eat it all,so the i'm going to use the leftover to make 'nasi goreng nenas'.Even though most of the recipes used tinned pineapple,i'm going to replace it with fresh pineapple.

NASI GORENG NENAS
sumbangan Kak Liza

bahan:
2 mangkuk nasi putih [sejukkan]
1/2 cawn nenas dalam tin[asingkan airnya]
1 biji telur [pukul sikit]
5 ekor udang besar
100 gm isi ayam [hiris kecil dan nipis]
2 ulas bawang putih ]
3 ulas bawang merah ] hiriskan
1/2 cawan mix-vege
1 biji lada merah [cincang]
1 s/b sos ikan [sos nampla]
1 s/b sos tiram
1 s/b lada hitam
2 s/b majerin

cara:
1. Panaskan majerin dan tumiskan bawang merah dan putih yg dihiris.
2. Masukkan ayam, udang. dan mix-vege . Kacau rata.
3. Masukan telur dan biarkan mask sikit baru dihancurkan.
4. Masukkan nasi, sos nampla, sos tiran dan nenas. Kacau rata.
5. Bila dah nampak agak garing boleh angkat dan masukkan dalm buah nenas yg dibelah 2 dan korek isinya.
6. Taburkan hirisan daun bawang dan hidangkan.

Nasi Goreng Nenas

nenas - yg dlm tin -didadu
nasi
bawang merah
bawang putih
1 labu bwng besar
ayam di dadu
telur sebiji
bunga kobis
karrot..potong halus
sos tiram
serbuk kunyit..utk warna..

cara:
1. tumis bawang merah dan putih yg dikisar
2. masukkan ayam..tumis...then masukkan bunga kobis..nenas..
3. masukan sos tiram.serbuk kunyit...
4. masukan bawang besar yg didadu..
5. masukan nasi..then cepat2 pecahkan telur.kacau...bubuh garam secukup rasa..
6. masukan karot.. masukan daun saderi..

Nasik Goreng Sardin dgn Nenas

Bahan2:
3 cwn nasik x abis semalam (itu yg lebih afdalll!!, mengelakkan pembaziran..)
3 biji bwg merah
2 biji bwg putih
1 biji bwg besar
3 ketul ikan sardin dlm tin
1/2 cwn nenas kiub
1 sudu besar serbuk cili
Sedikit air asam jawa
Garam secukup rasa

Cara2:
1. Gaulkan nasik dgn garam secukup rasa. Ketepikan.Tumbuk bwg merah dgn bwg putih. Hiris bwg besar.Panaskan minyak. Tumis semua bwg sehingga naik bau. Masukkan sardin yg sudah dilenyek kasar.Masukkan serbuk cili.Tumis sehingga sebati. Masukkan nenas. Bancuh secubit asam jawa dan masukkan air asam tersebut.Tumis sehingga bhn agak garing.Asam jawa tu utk megelakkan nasik berbau sgt hanyir sardin. Kemudian, masukkan nasik tadi. Gaul sebati dan hidangkan semasa panas! berpeluh makan beb!!
2. Kekadang aku letak je cili api, lagi kawww!! tp, nanti anak aku xleh mkn pulak..suka hati lah nak rasa pedas camne ok...

Nasi Goreng Nanas
(Pineapple Fried Rice)

Ingredients
300 gr cooked rice
150 gr chicken meat, slice 1x1 cm
2 cloves garlic, chopped
1 leaves green onion, slice thin
2 spoons fried onion
200 gr shelled shrimps
2 spoons cooking oil
100 fresh pineapple, chopped
1 red chilli, remove the seeds, slice julient
1 spoon salty soy sauce
1 spoon sweet soy sauce
50 gr raisin
1 spoon soya sauce
1/2 teaspoon pepper powder
1/2 teaspoon salt
1 spoon margarine/butter

Method
1. Mix shrimps, chicken, soya sauce, pepper and salt. Leave it for a moment for enough absorbtion
2. Fry margarine/butter and cooking oil, saute garlic till wilt
3. Add green onion and the mix of shrimps and chicken meat then mix well
4. Add cooked rice and chopped pineapple, red chilli, mix well again
5. Add fried onion mix awhile then raise pan from the stove
6. Sow with raisin and ready to serve.


Nasi Goreng Nanas

Bahan :
2 cup Nasi Basmati/ Long grain Rice
1/4 buah nanas potong kotak2
1/2 cup ayam jamur bisa dipakai ayam jamur matang/dada atau ayam jamur paha
1/2 sdm bawang putih cincang
1 sdm bawang bombany cincang
1 sdm prei iris halus
1/2 sdm fish sauce
1/2 sdm light soy sauce
1/2 sdm oyster sauce
merica dan sedikit gula untuk penyedap

Cara
1. Tumis bawang putih dan baombay dengan minyak 3 sdm, masukkan kecap2nya lalu ayam jamurnya, aduk rata masukkan nasinya, masak hingga bener2 meresap bumbunya , masukkan nanasnya, aduk sebentar masukkan daun prei, aduk cepat angkat dan sajikan panas2.
2. Dapat juga digunakan ayam mentah hanya prosesnya lebih lama, ayam mentah bagian dada atau paha, tumis setelah bawang putih dan bawang bombay masuk, setelah airnyanya hilang masukkan kecap2nya dst sama seperti diatas.


Pineapple Chicken Rice
(Nasi Ayam Nanas)

Ingredients:
2 Tbs. vegetable oil
1 lb. boneless chicken, cut in ½-inch cubes
3 cups chicken stock
1 tsp. salt
2 cups uncooked jasmine rice (long-grain rice), washed and drained
½ small pineapple, peeled and sliced and cut in small pieces
Seasoning ingredients:
3 shallots, peeled and finely chopped
5 cloves garlic
½-inch ginger root, peeled and chopped
1 tsp. coriander seeds
½ tsp. white peppercorns
½ tsp. cumin seeds
a little freshly grated nutmeg
2 inches cinnamon stick
2 cardamom pods, bruised
2 cloves
1 stalk lemongrass, bruised

Instructions:
1. Blend all seasoning ingredients except cloves and lemongrass with a mortar and a pestle or a food processor to form a paste.
2. Heat oil in a wok or heavy saucepan over medium high heat and then add blended seasonings and the rest of the seasonings ingredients and stir fry it for 2-3 minutes.
3. Add the chicken and continue stir frying for about 3 minutes.
4. Add chicken stock and salt and simmer until the chicken is tender. Strain the stock and set aside the chicken pieces.
5. Place rice in a rice cooker or heavy stockpot, add 2½ cups of the reserved chicken stock and bring to a boil.
6. Cover the pan and simmer until the rice is almost cooked and the liquid absorbed.
7. Add the diced chicken and cook over low heat until the rice is thoroughly cooked.
8. Serve on a platter garnished with fried shallots and pineapple pieces.
* Makes 2-4 servings.
