Rice Pudding

Old-Fashioned Rice Pudding I

INGREDIENTS
2 eggs, beaten
4 cups milk
1/2 cup white sugar
1/2 cup uncooked white rice
1 tablespoon butter
1 teaspoon vanilla extract
1/2 cup raisins (optional)
1/8 teaspoon ground nutmeg

DIRECTIONS
1. Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.
2. Beat together the eggs and milk. Stir in white sugar, uncooked rice, butter, vanilla extract, raisins, and nutmeg. Pour into prepared pan.
3. Bake for 2 to 2 1/2 hours in the preheated oven. Stir frequently during the first hour.



Rice Pudding

Ingredients:
4 oz (110 g) pudding rice, or arborio rice or beras pulut
14½ oz (410 g) evaporated milk
1 pint (570 ml) whole milk
1½ oz (40 g) golden granulated or caster sugar
1 whole nutmeg
1 oz (25 g) butter

Directions:
1. Pre-heat the oven to gas mark 2, 300°F (150°C).
2. You will also need a round ovenproof dish with a diameter of 9 inches (23 cm), 2 inches (5 cm) deep, lightly buttered.
3. This is simplicity itself, because all you do is mix the evaporated milk and whole milk together in a jug, then place the rice and sugar in the ovenproof dish, pour in the liquid and give it all a good stir. Grate the whole nutmeg all over the surface (it may seem a lot but it needs it), then, finally, dot the butter on top in little flecks.
4. Next just carefully pop the dish in the oven on the centre shelf and leave it there for 30 minutes, then slide the shelf out and give everything a good stir. Repeat the stirring after a further 30 minutes, then pop the dish back in the oven to cook for another hour, this time without stirring. At the end of this time the rice grains will have become swollen, with pools of creamy liquid all around them, and, of course, all that lovely skin!

Puding Beras Dengan Mangga

Bahan-bahan :-
250 gm beras
2 liter susu segar
250 gm gula pasir
3 helai daun pandan, disimpul
100 gm mentega
150 gm kismis
150 gm mangga, didadukan
6 biji telur
sedikit garam

Bahan Karamel :-
200 gm gula pasir
100 ml air

Cara-cara :-
1. Basuh beras kemudian sejat.
2. Jerang beras bersama susu segar, gula, daun pandan dan mentega di atas api perlahan.
3. Masak dan kacau selalu sehingga beras menjadi bubur. Angkat daripada api.
4. Keluarkan daun pandan. Bubuh kismis, mangga dan telur di dalam adunan. Kacau sebati.
5. Masukkan adunan ke dalam acuan yang telah dituang karamel.
6. Sejukkan dan keluarkan puding.Hias mengikut citarasa.

Untuk membuat karamel :-
1. Jerang gula dan air dalam periuk tidak melekat. Kacau hingga menjadi keemasan. Tuang karamel ke dalam bekas tahan panas atau tuang terus ke dalam acuan.

Kheer - rice pudding

Ingrediants
1/2 cup rice rice (basmati the best)
8 cups milk
4 cardamon pods
1 and 1/4 cup sugar
2 tbps slivered blanched almonds
1/4 tsp ground cardamon
1/4 tsp freshly grated nutmeg
1 tsp rose water or few drops rose essence

Method
1. Basuh beras & boil in water for 5 mins. Drain well
2. Didihkan susu with cardamons. Add rice and simmer.
3. Kacau selalu for 1 hour until nasi lembut and susu jadi pekat.
4. Add sugar and almonds and continue cooking until the consistency is like that of porridge.
5. Remove from heat, pick out the cardamon pods.
6. If you think the flavor needs intensifying, add ground cardamon.
7. When half cool stir in the rose water. Serve warm or chilled, in a large bowl or individual sweet dishes, the top sprinkled with a little grated nutmeg.

Puding Beras

Bahan-Bahan:
2 sudu besar minyak sapi
1 cawan tepung beras
5 cawan air
½ cawan susu tepung
½ sudu kecil serbuk buah pala
¾ cawan gula pasir
½ sudu kecil esen ros
Sedikit badam panggang

Cara:
Panaskan minyak sapi dalam kaserol tekan HIGH (4 minit). Masukkan tepung beras dan masak MEDIUM HIGH untuk 3 minit, dikacau selalu untuk menggelakkan hangus, kemudian keluarkan. Masukkan susu tepung yang telah dibancuh dengan air sedikit demi sedikit hingga semuanya sebati. Masak selama 3 minit HIGH. Kemudian masukkan esen ros, gula, serbuk pala. Masak lagi selama 5 minit HIGH dan kacau rata. Keluarkan dan masukkan ke dalam bekas kecil kemudian taburkan badam panggang. Lebih enak dihidang sejuk.

diner-style rice pudding

Ingrediants
3 cups whole milk
1/2 cup short-grain rice
1/4 teaspoon salt
1/2 cup milk
3 eggs
1/4 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1/4 cup raisins
1 tablespoon unsulfured molasses, optional

Preparation
1. Bring milk, rice, and salt to simmer in heavy medium saucepan. Reduce heat to low. Cover and gently simmer until rice is very tender and liquid is almost absorbed, stirring occasionally, about 1 1/2 hours.
2. Whisk milk, eggs, sugar, vanilla, and cinnamon to blend in medium bowl. Stir in raisins. Gradually stir egg mixture into rice mixture. Stir over low heat until mixture is just thickened, about 6 minutes. Transfer to bowl. Stir in optional molasses. Cool. Refrigerate until well chilled. (Can be prepared 2 days ahead.)
