Aneka Bubur Lambuk



BUBUR LAMBUK TERENGGANU (My Mom's Recipe)


Bahan
2 cawan beras - rebuskan hingga empuk mcm nasi bubur
1/2 kg keledek [warna merah/jingga] - potong kecil
1 s/b lada hitam
2 cm halia
5 ulas bawang merah
5 tangkai pucuk ubi
5 tangkai daun cekur manis
1 ikat daun paku merah
2 tangkai dan kadok
4 tangkai daun kesom
4 tangkai daun kemangin
1 helai daun kunyit
1 cawan udang basah saiz kecil - pilihan
2 ekor ikan kembung - bakar/rebus dan ambil isi
air secukupnya
garam

Cara membuat
1. Semua sayuran dipotong, basuh dan toskan.
2. Tumbuk lada hitam hingga lumat, setelah itu masukkan 10 ulas bawang merah, halia dan tumbuklah lagi sehingga lumat bersama isi ikan tadi.
3. Masukkan keledek dan bahan-bahan yang telah ditumbuk tadi bersama ikan yg dihancurkan ke dalam bubur nasi tadi.
4. Masukkan udang dan kacau sehingga rata.
5. Bila sudah hampir untuk diangkat, masukkan sayur-sayuran & garam secukupnya sambil dikacau hingga cukup rata dan sayur layu.
6. Angkat dan hidangkan.




BUBUR LAMBUK JOHOR STYLE (Mama Fami's Recipe)


Ingrediants :
Shallots ~ pounded
Garlic ~ pounded
Ginger (just a bit) ~ pounded
Minced meat
Kurma powder
fried grated coconut (kerisik)
Salt to taste
Carrots ~ diced
Potato ~ cleaned and diced
Rice
Enough water

To garnish :
Spring onions ~ chopped
Crispy fried onions

Method :
1. Heat oil and add in the pounded ingredients. Fry till fragrant.
2. Add in minced meat and stir.
3. Add in the kurma powder and fried grated coconut (kerisik). Stir well.
4. Wash rice and put enough water like how you prepare porridge.
5. Pour (3) into (4) and stir to mix.
6. Let it boil and add in the diced carrot and potato and leave to cook.
7. Before serving, garnish with spring onions and crisp fried onion.
