Happy Mother's Day

Happy mother's day to my mom,ahsenah binti nik.I luv u mak.Sorry i can't come home this year to celebrate it as i just come back from PAC programme.But i always remember u.Tq for ur undevoted love.My mom is the best cook in my life.I always long for her cooking.Today,i'll post my favorite dish of all time,'nasi dagang'.She was very good at it.Even every year,during hari raya,she'll make nasi dagang as the main dish.It will finish out b4 noon.My uncle always said to her,if she open a stall selling nasi dagang,she'll be rich.Hahaha....mengampu la tu.My mom always push me to learn to cook it but i always has excuses.She said,who'll inherit her skill when she died if i didn't want to learn as 'i'm her only daughter.I promise u mom,this year,i'll learn stage by stage from u as this year is my last raya as a bacheloratte.After this,i have to cook it myself.Luckily my fiance not very interested with it as it contains onion & ginger.

NASI DAGANG (My Mom's Recipe)

Bahan-bahan
600 gm cawan beras wangi
l beras pulut
30 gm halba
400 ml santan cair
400 ml santan pekat
gula & garam secukup rasa

Bahan utk DiMayang
5 ulas bawang merah
4 cm halia

Cara-cara membuatnya
1. Beras dan pulut disatukan dan dibasuh. Rendamkan selama 6 jam.
2. Toskan dan masukkan dalam kukusan yg berlubang.
3. Panaskan air dlm periuk kukus hingga mendidih.
3. Kukuskan sehingga naik wap @ 3/4 masak.
4. Keluarkan beras dan masukkan dalam bekas.
5. Siramkan dengan santan cair dan kacau rata.
6. Masukkan semula beras dalam kukusan berlubang.
7. Kemudian sekali lagi sehingga naik wap.
8. Masukkan dalam bekas dan gaulkan dengan santan pekat yg telah bercampur dgn garam, gula, halba & bahan yg dihiris mayang.
9. Gaulkan rata dan hidangkan bersama gulai nasi dagang dan acar

Gulai Ikan Tongkol

Bahan
1.5 kg ikan tongkol - dibersih & dipotong dan rebuskan dgn 50 gm asam keping dan garam secukupnya
60 gm rempah kari ikan
10 gm serbuk ketumbar
5 gm serbuk jintan
80 gm cili mesin
10 ulas bawang kecil [tumbuk halus]
3 ulas bawang putih (tumbuk halus)
3 cm halia (tumbuk halus)
3 cm lengkuas [tumbuk halus]
500 santan pekat
30 gm gula merah
30 gm kerisik
50 ml air asam jawa
belacan - jika suka
minyak untuk tumis
cili api dan belimbing buluh
Garam & bahan perasa secukupnya

Cara memasak:
1. Tumiskan bawang sehingga wangi. Masukkan cili dan rempah yang dibancuh dgn sedikit air asam jawa. Biarkan garing.
2. Masukkan rebusan ikan dan santan. Biarkan mendideh.
3. Perlahan api dan masukkan kerisik, gula merah, belimbing buluh dan cili api.
4. Biarkan api perlahan-lahan sehingga gulai naik minyak.

Acar Timun

Bahan
100 gm timun
100 gm lobak merah
100 gm cili merah & hijau
50 gm bawang besar
60 ml cuka
30 gm gula
garam
Air kapur secukup untuk merendam sayur

Cara
1. Timun dipotong 2 inci dan buangkan biji tengahnya. Mayang halus saperti batang mancis.
2. Lobah merah, cili merah & cili hijau dimayang halus saperti timun juga.
3. Bawang besar dibelah 2 dan mayang halus juga.
4. Rendamkan semua bahan yang dimayang dalam besen besar yg berisi air kapur selama 30 minit. Tapiskan dan biarkan sehingga kering.
5. Gaulkan gula, garam dan sedikit cuka sehingga sebati.
6. Masukkan semua bahan dalam bancuhan cuka. Gaul rata.
7. Hidangkan bersama nasi dagang.
