Sardine

I used to love sardine very much.Even though my mom had never cooked sardine for our family (my mom is not too fond of instant or canned food), i was introduced to sardine once i entered university.Most of us were very shot of money,coz' we depended on limited scholarship @ study loan,so we had to manage our money very well especially on food.As we were not allowed to cook,i tried to buy cheapest food apart of maggi mee.The cheapest on that time was sardine cooked in sauce.It only cost about rm1.30 - rm1.50 for a plate of rice, one sardine & a portion of veggie, excluding the drinks.So,almost every day,that was my lunch (usually i didn't take dinner & if i hungry at night,i ate maggi mee or bread).I loved sardine very much during the days;sardine for lunch/dinner,'roti sardine' or sardine sandwiches for breakfast.
One day,i bought a small can of sardine.I wanted to make sardine sandwiches on my own.It was my first time as no one ever taught me how to prepare dishes using sardine.I heard they squeeze some lemon juice in it to get rid of it fishy smell & taste.But,as we lived in dorm & we were not allowed to cook,so no lemon,no chilli,no onion or what-so-ever.So,i decided to eat on its own straight from the can;plain sardine.I made a lot of sandwiches using a loaf of bread & i ate it alone.But,half way i felt funny.Suddenly i had nausea & instantly i ran to the bathroom to vomit.All the food i ate on that day came out.I felt so bad.I vomitted a few times until i can't go in that bathroom after that bcoz' i kept on smelling the sardine.I threw away all the sardines bcoz' the smell of it made me wanted to vomit more.
From that day on,i can't eat sardine.I even can't smell the sardine bcoz' instantly i'll vomit or nausea.Once during a camping,our food qm prepare sardines for our dinner.I had to avoid the kitchen area bcoz' i started to vomit & during the dinner,i had to ate alone far from others to avoid the uneasy feeling & ate rice with veggie only.Once during a trip to penang with my best friends,i had to endure my hunger when all of them ate on the car bcoz' they brought sardine sandwiches.We had to open all the car's windows to get rid of the smell.I can't even share the drink with them (my friend only brought a tumbler of water with no straw)bcoz' everytime i tried to sip the water,i can taste the sardine.
I can't eat,i can't smell the sardine.Everytime i see the sardine at the food stalls,it reminds me of those memories.It was sad when people said i was too arrogant or snobbish of not eating sardine.I'm not too picky about wood & i used to love it very much but i had this experience that makes me can't eat it anymore.The lesson i get is don't eat something u like too much bcoz' u'll never know if it end up like me.
Sometimes i tried to smell the sardine sold at the food stalls.Who knows may be i can stand the smell again.Furthermore,the 'tragedy' happened 13 years ago.It was way too long.I wished i can eat it again,not only to enjoy the taste again but to save my budget.But i just can't.Until i met my fiance.He likes sardine even though not that too much.He knew why i didn't eat sardine (bcoz' one day he bought nasi lemak with sardine,i didn't eat it & i told him).But one day,he suggested to cook sardine bcoz' we're on very shot of money.I reminded him about the story but he wanted me to try his cooking.So,he cooked it (he cooked it by himself bcoz' i can't enter the kitchen bcoz' of the smell) & who knows,i can eat it but in a small portion with no sauce.Up until that day,occasionally my fiance cooked sardine for us.I began to eat sardine again but with one condition;my fiance's cooking.I tried to cook one day using my fiance's recipe & method,but it was not as tasty as his cooking & i can't eat it as much as when he cooked.So,next time i had to let my fiance cook if i want to eat sardine.
So,here is my fiance's recipe.Actually,it was very simple but i just don't know why,i can only eat his hand made sardine dishes.

SARDIN MASAK ASAM

Bahan
1 tin besar sardin [cap ayam - my fiance only likes this brand]
5 s/b kicap lemak manis [i used kicap cap kipas udang]
1 biji buah tomato [ belah 4]
1 mangkuk air asam jawa
1 keping asam gelugur
minyak
garam
gula
bahan perasa

Bahan Tumbuk - diblend halus
1 labu bawang besar
2 ulas bawang putih
3 tangkai cili merah / cili kering
2 sm halia

Cara
1. Asingkan ikan sardin dan kuahnya.
2. Panaskan minyak dan goreng ikan sardin tadi hingga garing.Angkat & toskan.
3. Kemudian tumiskan bahan yang ditumbuk/diblend sehingga agak garing.
4. Masukkan air asam jawa, asam gelugur (jika mahu lebih masam), kicap, gula, garam dan bahan perasa. Kacau rata.
5. Masukkan sardin yang telah digoreng tadi apabila kuah sudah menggelegak. Kacau rata.
6. Masukkan buah tomato dan kacau rata. Biarkan naik minyak.
7. Sedia untuk dihidangkan.
Note:-I didn't use the 'kuah' bcoz' i can't stand the real taste of the sardine.I even fry the sardine to keep away the smell & to minimise the stinky/fishy taste.I use a lot of 'asam jawa' to make the gravy sour bcoz' of the same reason.But u can balance the sour taste by adding some sugar & 'kicap lemak manis'.



GORENG SARDIN

Bahan
1 tin besar sardin [cap ayam]
3 s/b cili sos
2 biji buah tomato [ belah 4]
3 biji limau kasturi [ambil jusnya]
minyak
garam

Bahan Hiris
1 labu bawang besar
2 ulas bawang putih
3 tangkai cili merah
2 sm halia

Cara
1. Panaskan minyak dan tumiskan bahan hiris sehingga layu.
2. Masukkan sardin dan sos cili. Kacau rata.
3. Masukkan buah tomato dan kacau rata. Biarkan naik minyak.
4. Tutup api dan masukkan jus limau.
5. Hidangkan.


Sardin masak kicap

Bahan-bahan ( ikut saiz tin )
1 tin Sardin Besar-brand Terpulang
2 ulas bawang kecik-di cincang
2 ulas bawang putih-dicincang
1cm halia-dicincang
cili padi-(lagi byk lagi ummp)-hiris halus
1 labu bawang besar-potong bulat
5 sudu besar kicap biasa
garam,gula,perasa
air asam jawa
sedikit air

Cara-cara
1. tumis bahan yg telah dicincang hingga naik bau
2. masuk kan cili padi.tumis lagi.masukan air asam jawa
3. masukan sardin.lepas kacau kejap,masukkan kicap,kalu nak kuah masuk kan air dan tambah perasa.akhir sekali masukan bawang besar.



Sardin Sambal

Bahan-bahan ( 2 orang makan jer.. )
1 tin kecil Sardin
Sedikit Kulit Kayu Manis(sebesar tooothpick)
Sedikit Asam Keping

BAHAN DIBLENDER:-
1 biji Bawang Besar
1 biji Bawang Putih
1/2 Halia
20 tangkai Cili Kering(direbus dahulu)

Cara-cara
1. Panaskan sedikit minyak,masukkan kulit kayu manis & bahan yg telah diblender.Kacau rata.
2. Masukkan asam keping kedalamnya.Kacau sekali sekala sehingga pecah minyak atau sapai warnanya berubah sedikit gelap.
3. Kemudian masukkkan pula sardin,garam & serbuk perasa secukupnya.Kacau rata.
4. Siap dihidang.Enak dimakan bersama telur dadar & timun.



SARDIN KASTURI [Jonah]

Bahan
1 tin sardin - mesti cap ayam
1-2 biji bawang besar - potong bulat2
cili padi akar - banyak mana pun suka hatilah
anggaran 10 biji limau kasturi - tak tipu!

CARA MEMASAK:
1. Goreng bwg sebentar dan cili padi.
2. Masukkan sardin
3. Perahkan asam limau kasturi
4. Kalau suka, hancur2 kan isi ikan sardin tu
5. Bubuh garam sesedap rasa
6. Kalau suka, boleh tambah tomato sekali

NOTA:
1. Sardin simpoi ni adalah cara basic. Kalau suka boleh tambah dengan jering goreng, kerdas goreng, peria, petai, atau kentang. Bubuhsemua skalipun sodap!
2. Limau kasturi memang banyak di gunakan untuk mematikan hanyir ikan sardin. Jangan takut2, sebab kalau dia masam2 lagi sodap!
3. Makan dengan telur dadar berdaun kunyit.


Tumis Pedas Ikan sardin [Kay]

Bahan
1 tin - Ikan sardin cap ayam
lada kering - agak2 jer yg dah dikisar
1 biji bawang besar - dipotong nipis
air asam jawa
2 biji bawang putih - ditumbuk
3 biji bawang merah - ditumbuk
sedikit halia - ditumbuk
3 biji kentang - dipotong memanjang & goreng
1 biji lada besar
garam, gula secukup rasa

Cara
1. Tumis bahan tumbuk hingga garing dan masukan lada kisar sampai garing juger
2. Masukkan air asam jawa masak seketika... baru masukkan ikan sardin.
3. Kemudianya masukkan bawang besar.. dan kentang goreng tadi serta lada besar... masak sekejap baru la angkat serta hidang.


SARDIN & JAGUNG MUDA

Bahan-bahan :
1 pkt kecil jagung muda belah dua memanjang
100g cendawan dipotong2
20 batang cili padi (kurang kan jika suka dan buang tangkainya)
1 1/2 cawan santan
1 tin besar sardin ( ambil isinya sahja)

Bahan dikisar:
6 biji bawang merah kecil
3 biji buah keras
1cm kunyit basah
3 batang lada merah

Cara membuatnya :
Pijarkan minyak.. tumis perencah halus sehingga wangi. Masukkan jagung dan cendawan. Kacau selama beberapa minit sahaja kemudian tunakan santan bersama garam dan masak sehingga mendidih, Masukkan pula lada padi (sebiji2), biar mengelegak sebentar dan masak selama 5-10 minit. Tambahkan ikan sardin diakhir masakan. Siap dihidangkan..

Sardin Masak Tempoyak

Bahan-Bahan:
1 tin sardin
1 biji bawang besar (dihiris)
1 biji cili besar (dihiris nipis)
Seulas bawang putih (dihiris)
Sedikit tempoyak
Minyak untuk menumis

Cara:
1. Panaskan minyak, tumis bawang besar, bawang putih dan cili.
2. Masukkan sardin dan tempoyak, biar hingga masak. Tambahkan sedikit air jika kuah terlalu pekat.

SARDIN MASAK LEMAK CILIPI [hanieliza]

Bahan-Bahan:
1 tin sardin yg besar
10 biji buah belimbing
1 batang serai [ketukkan]
2 cawan santan pekat
1 biji buah tomato [belah 4]
garam

bahan tumbuk
15 biji ciliapi
5 ulas bawang merah
5 ulas bawang merah
2 sm kunyit

Cara:
1 Masukkan sardin dan bahan tumbuk bersama serai, buah tomato, garam dan belimnbing.
2. Bila dah mendideh masukkan santan pekat dan rasakan asam garam.
3. Kacau perlahan sehingga mendideh lagi.
4. Tutup api dan hidangkan.

SADIN GORENG HALIA [bebeh]

Bahan-bahannya:-
- 1 tin sadin cap ayam yang besar - asingkan dari sos nyer
- 4 batang cili masak - dibelah dua tak perlu buang biji
- 1 inci halia - dihiris halus halus
- 4 ulas bawang merah - dihiris halus
- 2 ulas bawang putih - dihiris halus
- suku mangkok air asam jawa
- 1/2 cawan minyak utk menggoreng
- sedikit garam dan ajinomoto mengikut rasa

Cara Menyediakannya:-
1. Mula2 panaskan minyak kemudian gorenkan sadin, kena berhati hati sebab nanti sadin ney akan meletop letop so, api tuh slow sikit tak perlu garing dan angkat ketepikan
2. Kemudian dlam kuali dan minyak yang sama tumiskan bahan2 yang dihiris, bila wangi masukkan sos sadin tadi, cili masak diikuti sadin dan air asam
3. Kacau perlahan supaya sadin tak hancur, masukkan garam dan ajinomoto....

SADIN MASAK LEMAK CILIPADI BERSAMA KENTANG [bebeh]

Bahan-bahannya:-
- 1 tin sadin besar cap ayam
- santan kelapa 2rm - asingkan pati secawan yg selebihnya + 3 cawan air
- cilipadi kampung 1rm
- 4 biji ubi kentang dibelah dua
- 4 ulas bawang merah
- 1/2 inci kunyit hidup

Cara Menyediakannya:-
1. Cili api bawang merah dan kunyit di kisar dan masukkan kedalam periuk dan masukkan juga santan yg dicampur dgn 3 cawan air sejuk panaskan diatas api kacau selalu.
2. Masukkan Sadin dan kentang kacau selalu sehingga melegak masukkan pati santan garam dan aji nomoto padamkan api.

Sardin goreng bawang dgn daun sup [ninoZ]

Bahan
1 tin sardin - buangkan sos nyer amik ikan sahaja
1 bwg beso yg beso- potong gegelang or separuh gelang or suku gelang :D
halia sket- finely chopped/sliced
2 bwg putih - crushed
daun sup - chopped
crushed black pepper
1/2 tsp sos tiram sket
limau nipis sket
hirisan cili merah
garam n gula secukup rasa
minyak

Cara
1. panaskan minyak[lebih sket tp jgn too much]..tumiskan halia, bwg putih n black pepper
2. masukkan ikan sardin..goreng bior cam garing sket n masukkan daun sup pastu sos tiram..
3. masukkan bwg beso n hirisan cili..seasonkan garam gula secukup rasa n perahkan limau nipis..
4. siappp!
5. makan dgn nasik..jgn lupa taruk kicap..

Baked Sardin [ninoZ]

Bahan
sardin tu buang sosnyer..beli yg dlm tin leper n oval tu..
blend together:
santan pekat[sket je..just enuf utk blend
serai
bwg merah
cili merah
kunyit n daun kunyit[kalau ade]
halia sket je
cuka or jus limau sket aje
jintan manis n ketumbar[leh omit kalau maleh nak taruk]
garam gula

Cara
1. susun sardin dlm caserol, curahkan bahan yg dikisar [jgn berkuah sgt]
2. pastu bakar sampai masak.Siapppp!

Masak Lomak Sardin dgn Nenas [ninoZ]

Bahan
satu tin sardin
nenas - potong
kentang - potong
tomato - potong wedges

dikisar halus
3 bwg merah sket
2 bwg putih sket
cili padi - ikut kepedasan yg dikehendaki
santan
kunyit hidup/serbuk

daun kunyit - hiris atau siat
sedikit lada hitam - bior sebiji- sebiji
serai - titik
garam gula secukup rasa

Cara
masukkan bahan kisar bersama sama nenas n kentang, lada hitam, serai n daun kunyit.. renih perlahan2 sampai kentang agak empuk. kacau selalu agar santan tak berkepala
pastu masukkan sardin n tomato..bior merenih n pekat, perisakan garam gula secukup rasa..

Sardin goreng cili padi [azaleena]

bahan2:
blend cili api, bwg merah & bwg putih,
masukkan bhn2 yg diblend + air sket dlm kuali yg telah dipanaskan minyak, masukkan garam + gula
bila dah nak kering, masukkan ikan sardin.
