Kaki Ayam Masak Kicap

Biasanya klau beli kaki ayam, saya buat sup. Jarang2 sgt buat gulai @ masak kari sbb tak suka lemaknya. Ye la, gulai @ kari tu dh la blemak, kaki ayam lg la byk lemak. Klau buat sup, ok ckit. Bleh hirup kuah sup skali.
Ari ni beli kaki ayam lg. Sbenarnya dh tak tau nk mkn lauk apa. Bila gi pasaraya, buntu nk beli apa. Last2 beli kaki ayam tp sbb dh biasa sgt buat sup, ari ni nk cuba resepi lain plak; kaki ayam masak kicap. Btul, sblom ni tak terfikir pn nk masak mcm ni. May be sbb dr kecik mak ajar buat sup @ gulai jer. Kt kedai pn mcm tu, biasa org buat kari. Sedap gak rupanya buat mcm ni...thanx to penyumbang resepi ni.


Chicken Feet In Soy Sauce

Ingredients
1/2 kg kaki ayam
Kicap masin & manis
1 inci kulit kayu manis
2 kelopak bunga lawang
1 camb black pepper, crushed
1 inci halia, dihiris halus
1 biji bwg besar, dimayang
3-4 bwg putih, crushed
1 keping asam gelugor (btw, how do we say this in english??)
3-4 keping fucuk
6-8 keping shitake mushrooms, sliced
(akak guna button mushroom since me no like shitake)
1 camb sesame oil

How To
1. Gaul kaki ayam ngan kicap2 & deep fried them. Kalau ada deep fryer, memang senang banyak la...... cam akak...wakawaka. Goreng sampai masak & garing.
2. Then, fry all onions, pepper & ginger till fragrant. Pastu, masukkan kicap secukup rasa & tambah sedikit air. Then add in the chicken feet & mushrooms. 3. Pour the whole thing into a pressure cooker & cook for 10 mins. Kalau takde pressure cooker, masalah la skit....kena masak lama2 la atas api.
4. While waiting for the chicken, fry the fucuk in hot oil. Fucuk tu dipotong2 dulu, baru digoreng. Make sure api betul2 kecik - otherwise hangus fucuk tu nanti. One more thing - dun soak or wash the fucuk before frying them. It has to be fried dry - got it?
5. By the time you finish frying the fucuk, your 10 mins should be over already. Rasakan masin & manis ayam tu. Sebelum angkat, percikkan sedikit minyak bijan for the aroma.... wallauweh. Kalau tak suka kering sangat, tambah la air skit & vice versa.
6. Just before serving, put in the fried fucuk.
7. For all chicken feet lovers out there, this recipe is worth trying for. You'll be amazed with the outcome - itu kalau jadi la....hehehehe.....



Kaki Ayam masak kicap

Bahan2nya
1/4 kg kaki ayam yg dah dibersihkan & direbus hingga lembut
2 ulas bawang merah
2 ulas bawang putih
sedikit halia
1 cili merah
sedikit kunyit
1/2 senduk kicap
1 keping asam jawa
Serai yg dititik
Sedikit gula to taste

Cara2 membuatnya:-
1. Cili merah+bawang putih+bawang merah+halia ditumbuk. Lepas tu tumis bersama serbuk kunyit, keeping asam & serai hingga berwarna brownish. Baru masukkan kicap & sedikit air rebusan kaki ayam.
2. Bila kaki ayam dah lembut & air rebusan dah menggeledak, bubuh sedikit gula & ajinomoto (optional).
3. Kalau suka boleh bubuh sedikit kerisik & boleh hidangkan dgn ditaburkan daun bawang/daun sup.



Kaki Ayam Masak Kicap

Bahan-Bahan:
1 kg kaki ayam
½ cawan kicap
10-15 ulas bawang putih
5 kuntum bunga lawang
sedikit kicap manis
sedikit gula dan bahan perasa

Cara:
kaki ayam dibuang kuku dan dipotong dua. Gaul kaki ayam tadi dengan setengah cawam kicap dan biarkan seketika. Goreng kaki ayam tadi hingga ranggup. Masukkan kaki ayam yang telah digoreng ranggup kedalam periuk tekanan (pressure cooker),masukkan juga bawang putih,bunga lawang,kicap manis,gula,serbuk perasa dan air secukupnya(sama paras dengan kaki ayam tadi. Masak selama 1 jam sampai kaki ayam lembut.

Tambahan:
Semasa menggoreng kaki ayam, kuali hendaklah ditutup untuk mengelakkan minyak panas terpercik ke muka.
