Mee Kicap

Mcm mee hailam. Sama ke? I heard abou this mee kicap from my x-colleague many years ago. She said her favorite is mee kicap & she always eat it while she was studying in perak. That was my first time i heard the name of mee kicap. & if not mistaken, i've been to lots of stall & restaurant in kl, but i haven't see any menu of mee kicap. At that time i thought may be it's same with mee hailam bcoz' mee hailam also used kicap, right?
Then i came into this mee kicap recipe. So it does exist but from my reading it is well known in perak, the same state my x-colleague ate it. & from my observation, the main different between mee hailam & mee kicap is mee kicap was served with soup. Right? Correct me if i'm wrong.
Since i've found the recipe, why not if i try it? Boleh la rasa kesedapan mee kicap...my friend said, mkn smpai jilat pinggan...Thanx a lot to all the recipe's contributors. I guess the real mee kicap recipe was from che' iza. The rest of almost the same with mee hailam or mee goreng kicap...


Mee Kicap

250 gm mee kuning
lbh kurang 40-50 gm taugeh

*KUAH*
2 biji bawang putih diracik halus
1 sb minyak masak
1cm halia ditumbuk
3 sb kicap manis
3 sb sos tiram
1 sk kicap pekat
1 sk pati ikan bilis (saya guna brand tumix)
sedikit lada sulah
1 cwn air
garam n sedikit gula kalau perlu......

*SUP*
1 biji bawang merah
1 ulas bwg putih
3 cwn air
1 sk pati ikan bilis
fish cake n fish ball
sedikit lada sulah n garam

Cara-cara
1. Panaskan minyak... tumis bawang putih hingga kekuningan n garing... Kuarkan bawang putih. (Jgn buang akan tabur kat mee nanti.....). Kita akan dpt minyak bawang putih....
2. Dgn minyak tadi tumis halia hingga naik bau masukkkan kicap manis, sos tiram, air n kicap pekat. Biar mendidih...
3. Masukkan lada sulah, pati ikan bilis n garam n gula kalau sos tiram tak masin. Biar hingga kuah pekat.... Siap, matikan api.
4. *UTK SUP*
Tumis bawang merah n bawang putih hingga naik bau masukkan air... biar mendidih, letak pati ikan bilis lada sulah, fishball, fish cake n sikit garam... biar mendidih n siap...
5. Celur mee n taugeh... tapis...letak kat pinggan n tuang kuah kicap..... tabur ngan daun bawang, bawang putih goreng... Siap tuk dihidang......
6. Hidang bersama sup n lada kicap..... Biasanya saya suka mkn ngan ayam hainan

Bahan-bahan ( 4 org makan... )

Bahan kisar
udang kering
2 ulas bawang putih
3 biji bawang merah
2 biji cili merah, cili kering (ikut pedas)

3 sudu besar kicap pekat manis
1 sudu besar sos tiram
fishcake, fishball, udang, sawi, daun sup dan 1 pkt mee kuning
1 sudu besar cuka, garam dan gula
1/2 cwn air dan bancuhan tepung jagung untuk pekatkan kuah

Cara-cara
1. Tumis bahan yg dikisar. Masukkan cili kering, sos tiram, kicap pekat dan cuka. biar naik baunya.
2. Masukkan air sedikit (ikut suka banyak kuahnya), bila mendidih, masukkan bahan2 lain termasuk mee.
3. Akhir sekali masuk bancuhan tepung jagung.




MEE KICAP ALA CIKGU MURNI

BAHAN-BAHAN
Fishball
Fishcake
Tauhu
Ikan bilis
Lada hitam
Bawang putih 3 ulas
Mee kuning

CARA-CARA
1. Goreng fishball, fishcake dan tauhu.
2. Tumbuk/kisar ikan bilis bersama bawang putih dan lada hitam.
3. Tumis semua bahan hingga pecah minyak dan masukkan air sebanyak sesuai.
4. Biar mendidih, tambah garam, aji (jika suka)
5. Celur mee/kway teow – angkat dan tuskan.
6. Celur tauge/sawi (jika suka)
7. Untuk kicap: Panas sedikit minyak. Tumis bawang putih 1 ulas. Masukkan 1 senduk kuah tadi, tambah kicap dan biarkan didih. Jika masin, tambah sedikit gula. Angkat.
8. Untuk cili: Panas sedikit minyak. Masukkan 1 senduk kuah tadi. Masukkan cili mesin. Tambah garam dan aji sedikit. Biar pecah minyak dan angkat.




MEE KUAH KICAP

Ingredients
Fresh noodles
Onion and garlic
Oyster sauce
ABC soy sauce
Caramel sauce
Carrot and bok choy
Shrimp
2 eggs
Salt to taste

Method:
Tumis cam biasa-biasa kita tumis mee…takyah nak beria-ia ikut step by step…campak-campak ler apa pun…asalkan ada bentuknya cam mee kuah kicap..hehehehe…
